Recipe Steak Dantxari vapor with vegetables
- 750 g. of veal fillet
- 500 g. of green beans
- 400 g. of broccoli
- 400 g. of cauliflower
- 300 g. of carrots
- Fine salt
- Flake salt
- Black pepper
- Extra virgin olive oil
- 4 spoons of bicarbonate
1º Clean the green beans and cut them into halves
2º We put a pot with 2 l. of water approximately.
3º We put two spoonfuls of fine salt, when the water begins to boil we put the green beans and we add 2 spoonfuls of bicarbonate (we cook from 10 to 15 minutes). Once they are cooked, drain them and put them in cold water to cool them down.
4º Chop up the broccoli and cauliflower. Bring the water to the boil, first cook the cauliflower for 10 to 15 minutes. At the end of the cooking pass through water to cool.
5º In the same water that was boiling put the broccoli and added 2 tablespoons of baking soda (cook for 2 to 3 minutes) cooled in the same way as the previous vegetables.
6º Peel the carrots and cut them into 4 small pieces to turn them (cook for 10 to 15 minutes) and cool them down with abundant cold water.
1º We put to boil a liter of water in a steamer. When the water is boiling, we put the sirloin for 3′ this makes the meat contract, the pores close and all the juice of the blood of the sirloin remains inside.
2º Take out the sirloin and cut it into 4 or 6 pieces, depending on the thickness of each one.
3º Tin the dish, adding the vegetables and the sirloin.
4º Season the sirloin with flaked salt, black pepper and oil (AOVE) to taste.
Note: Before serving this dish, it must be baked in the oven to get its temperature.
Heat the oven to 180º and pass the dish already placed in the oven for 3′ .
If we accompany it with a red wine to enjoy it, let it be a light red wine, otherwise the wine would eat the delicate taste of this dish.
