Dantxari Recipe Potaje Previous to Holy Week

One of the most sought after dishes in the Gastronomy of Holy Week, the Potaje de Vigilia (Dantxari Recipe Potaje Previous to Holy Week) was born because of the prohibition to eat meat these days, therefore it is usually eaten on Fridays in Lent of this period

Ingredients for 6 people
  • 250 gr of chickpeas
  • 250 gr of desalted cod
  • 250 gr of fresh spinach
  • 1 carrot
  • 1 leek
  • 1 garlic head
  • 1 onion
  • 1 egg
  • Salt
  • Pepper
  • 2 slices of tin loaf without crust
Cook the chickpeas with the vegetables without the spinach. Once cooked, remove the vegetables, mash them and add them to the chickpeas again, using a potato masher.
To Make the stuffing
Crumble the bread and add the egg, salt and pepper. Beat well and fry taking with a soup spoon.
Add the washed and chopped spinach, the chopped cod and the stuffing, bring to the boil for 10 minutes
